I'm sponsoring my mother for green card and not sure if I should list all the married children that are over 21 years old.

Yes, you are supposed to provide a list of all her children, especially if she may one day want to sponsor them for citizenship. If extra space is needed to complete any item, attach a continuation sheet, indicate the item number, and date and sign each sheet.
